      It isn’t Thanksgiving without mashed potatoes, and they appear on almost every table across the US. Make your vegan family member’s day by providing a hearty and delicious side. It is the perfect and easy dish for showing off your vegan cooking skills.  

      Vegan Mashed Potatoes – Aren’t all potatoes vegan?

      Yes potatoes are a plant, and therefore naturally vegan. In fact potatoes, a starchy, nutrient-rich vegetable, make a great part of a vegan food diet because they’re plant-based. However, not all potato recipes are vegan. In fact, many potato recipes are loaded with butter, dairy, and even meat like bacon. The good news is it’s easy to make your favorite potato recipes vegan.

      What is a typical serving size for mashed potatoes?

      The United States Department of Agriculture considers that a serving of mashed potatoes is 1 cup, which equals 210 grams (g) or almost half a pound (0.46 pounds). If you are serving mashed potatoes as part of a dinner a five pound bag will server 10-12 people.

      How to make Vegan Mashed Potatoes

      Ingredients  

      • 2 lbs. of gold Yukon potatoes 
      • 6 tbsp of olive oil  
      • 2 tbsp refined coconut oil  
      • 3 garlic cloves, peeled and smashed  
      • Thinly chopped chives (garnish)  
      • Black pepper (garnish)   

      Instructions  

      1. Peel and roughly chop the potatoes into 2-inch chunks.  
      2. Place potatoes in large pot and cover with 1-inch of cold water. 
      3. Stir in ½ tablespoon of salt and bring to a boil.  
      4. Cook for 10-15 minutes, until tender.  
      5. Drain majority but not all the potato water. (The amount of water will determine how runny your mashed potatoes are).  
      6. Meanwhile, heat olive oil in a small saucepan, over low heat. Add garlic cloves and simmer for 3 minutes.  
      7. Remove garlic and pour contents of saucepan, plus coconut oil, ½ tsp. salt and ground pepper into the potato pot.  
      8. Mash the mixture with a potato masher until you reach your desired texture.
