How to make Vegan Mashed Potatoes
Ingredients
- 2 lbs. of gold Yukon potatoes
- 6 tbsp of olive oil
- 2 tbsp refined coconut oil
- 3 garlic cloves, peeled and smashed
- Thinly chopped chives (garnish)
- Black pepper (garnish)
Instructions
- Peel and roughly chop the potatoes into 2-inch chunks.
- Place potatoes in large pot and cover with 1-inch of cold water.
- Stir in ½ tablespoon of salt and bring to a boil.
- Cook for 10-15 minutes, until tender.
- Drain majority but not all the potato water. (The amount of water will determine how runny your mashed potatoes are).
- Meanwhile, heat olive oil in a small saucepan, over low heat. Add garlic cloves and simmer for 3 minutes.
- Remove garlic and pour contents of saucepan, plus coconut oil, ½ tsp. salt and ground pepper into the potato pot.
- Mash the mixture with a potato masher until you reach your desired texture.
