      These little bites are a staple in my house – the kids love them and they’re part of our Eat Cleaner meal. So much better than packaged bars, packed with protein, good fats and slow burning carbs and perfect for the morning, before and after workouts and as an after meal treat.

      How to make Pumpkin N ‘Spice Fit Bite Truffles

      Ingredients:

      • ½ cups old-fashioned gluten-free rolled oats
      • 1 scoop non-whey protein powder
      • 1 Tablespoon unsweetened cocoa powder
      • 1 Cup unsweetened canned or aseptic-packed pumpkin
      • 2 tsp pumpkin pie spice
      • ½ cup 70% or more unsweetened Cacao dark chocolate chips
      • 1 tsp pure vanilla extract
      • 2 tsps organic stevia extract (liquid or powder)

      Toppings to Roll “Truffles” In:

      • Crushed walnuts
      • Slivered almonds
      • Unsweetened shredded coconut
      • Unsweetened cocoa powder
      • Unsweetened rice crisps

      Directions:

      1. In a medium mixing bowl, combine all dry ingredients.
      2. In a separate small bowl, combine pumpkin, stevia extract (if liquid – if powder or granulated, add to dry ingredients) and pure vanilla extract. Add to dry ingredients and mix thoroughly until well incorporated.
      3. Freeze mixture for about 30 minutes. Roll into 1 ½” balls and press into desired toppings to create an even coat. Freeze extras in an airtight container for grab-and-go snacks, clean desserts and pre/post workouts.

      Option- Dip truffles in dark chocolate

      When your pumpkin spice balls have frozen, it’s time to melt the chocolate for extra special treats! We highly recommend using good quality dark chocolate bars! Ghirardelli and Lindt are two of our favorites. When melted, these brands turn very thin and liquidy — exactly what you want! That thin and liquidy consistency makes dipping your healthy pumpkin truffles so much easier. Don’t use chocolate chips! They contain a stabilizer, which prevents them from melting into as smooth, thin, and liquidy of a consistency.

      Ingredients

      • Solid dark chocolate bars
      • Flaky sea salt (optional)

      Directions

      1. Place the dark chocolate into a microwave-safe bowl. Microwave on HIGH for 30 seconds. Stir for 1 minute. Continue to heat for 10-second intervals, stirring for 1 minute between each, until the chocolate has completely melted.
      2. Working with one filling sphere at a time, carefully dip it in the melted chocolate using two forks, and let the excess drip off by rocking it between the two forks. Place back onto a tray covered with wax paper. If using the flaky sea salt, sprinkle a small amount on the top of the dipped truffle. Repeat with the remaining chocolate and filling spheres.
