      These Mediterranean Roll-Ups are extremely tasty, especially with the hummus and tabouli! This wrap makes for a flavorful, tasty lunch that is also a is a great vegetarian option. The best part – it can be made and ready-to-eat in 5 minutes or less.

      How to make Mediterranean Roll-Ups

      Ingredients:

      • 1 large whole wheat flour tortillas (10-inch)
      • 1/4 cup hummus
      • 1/4 cup ready-made tabouli
      • 1 leave romaine lettuce (chopped)
      • 1/2 cup alfalfa or bean sprouts
      • 1 large tomato (chopped)

      Directions:

      1. Lay the flour tortilla flat on a cutting board or plate.
      2. Spread the hummus and tabouli in a long row, side by side down the center of the tortilla.
      3. Add romaine lettuce on top.
      4. Add sprouts and chopped tomatoes on top
      5. Get ready to roll! Starting from the edge of a long side, roll it up.
      6. Cut it in half and enjoy immediately or wrap it tightly in plastic wrap to enjoy later.

      Notes

      1. To eat this as an appetizer, wrap it in plastic wrap and let it “set” in the refrigerator for 2–3 hours. Remove the plastic wrap and cut the rolls into 1-inch slices, using a sawing motion. Serve cut side up on a platter.
      2. Add additional toppings such as sliced sun dried tomatoes, chopped pitted Kalamata olives or shredded cheese.
      3. Make your own hummus – This homemade hummus recipe is incredibly easy to make in minutes with canned chickpeas. It is a great option for the wraps above and you will have extra to use as a dip with veggies or pita chips. Really it’s great with anything!
        • Ingredients:
          • 1 (15 ounce) can chickpeas, drained, liquid reserved
          • 1 tablespoon lemon juice
          • 1 tablespoon olive oil
          • 1 clove garlic, crushed
          • ½ teaspoon ground cumin
          • ½ teaspoon salt
          • 2 drops sesame oil, or to taste (Optional)
        • Directions
          1. Gather all ingredients.
          2. Blend chickpeas, lemon juice, olive oil, garlic, cumin, salt, and sesame oil in a food processor.
          3. Stream reserved chickpea liquid into the mixture as it blends until desired consistency is achieved.
          4. Ready to use
        • Note: You can store leftover hummus in an airtight container and refrigerate for up to one week. After one week it is advised not to eat it.
