

These Mediterranean Roll-Ups are extremely tasty, especially with the hummus and tabouli! This wrap makes for a flavorful, tasty lunch that is also a is a great vegetarian option. The best part – it can be made and ready-to-eat in 5 minutes or less.
How to make Mediterranean Roll-Ups
Ingredients:
- 1 large whole wheat flour tortillas (10-inch)
- 1/4 cup hummus
- 1/4 cup ready-made tabouli
- 1 leave romaine lettuce (chopped)
- 1/2 cup alfalfa or bean sprouts
- 1 large tomato (chopped)
Directions:
- Lay the flour tortilla flat on a cutting board or plate.
- Spread the hummus and tabouli in a long row, side by side down the center of the tortilla.
- Add romaine lettuce on top.
- Add sprouts and chopped tomatoes on top
- Get ready to roll! Starting from the edge of a long side, roll it up.
- Cut it in half and enjoy immediately or wrap it tightly in plastic wrap to enjoy later.
Notes
- To eat this as an appetizer, wrap it in plastic wrap and let it “set” in the refrigerator for 2–3 hours. Remove the plastic wrap and cut the rolls into 1-inch slices, using a sawing motion. Serve cut side up on a platter.
- Add additional toppings such as sliced sun dried tomatoes, chopped pitted Kalamata olives or shredded cheese.

- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 clove garlic, crushed
- ½ teaspoon ground cumin
- ½ teaspoon salt
- 2 drops sesame oil, or to taste (Optional)
- Directions
- Gather all ingredients.
- Blend chickpeas, lemon juice, olive oil, garlic, cumin, salt, and sesame oil in a food processor.
- Stream reserved chickpea liquid into the mixture as it blends until desired consistency is achieved.
- Ready to use
- Note: You can store leftover hummus in an airtight container and refrigerate for up to one week. After one week it is advised not to eat it.
