

Breakfast Burritos are easy to make and so good! I like making these on my griddle with bacon, eggs, cheese, crispy crowns, and jalapeños, but you can really customize them to your liking! Quick enough for busy weekends or freeze-and-reheat for a grab-and-go breakfast all week long.

How to make Easy Breakfast Burritos
Ingredients
- 6 eggs
- 2 tablespoons chopped green chiles
- 1 to 2 tablespoons milk
- 6 fully cooked breakfast sausage links, cut into small pieces
- 1 20-ounce bag refrigerated, shredded, hash-brown potatoes
- 6 flour tortillas
- 2 cups shredded Mexican-cheese blend
Directions
- In large bowl, beat 6 eggs; 2 tablespoons chopped, green chiles; and 1 to 2 tablespoons milk until well blended. In 10-inch skillet over medium heat, cook eggs, stirring occasionally, until scrambled. Stir in 6 fully cooked breakfast-sausage links, cut into small pieces; heat until warm. Set aside. Cook hash-brown potatoes as directed on bag; set aside.
- To assemble burritos, spoon a line of hash browns down center of each tortilla. Top with shredded cheese and the scrambled eggs. Roll each tortilla tightly, folding in the ends, to secure filling. Serve immediately, or freeze as directed below.
- To freeze, wrap each burrito in a paper towel, then in foil. Freeze. To reheat, remove and discard foil. Microwave each frozen paper towel-wrapped burrito on High for 2 minutes 30 seconds, turning over halfway through heating.
Tips and Frequently Asked Questions
- This recipe makes 6 large breakfast burritos, but you could use smaller flour tortillas and make more smaller burritos. I save any extras in the freezer in freezer bags for an easy breakfast another day. I usually just microwave the frozen burritos until they are hot.
- If you want spicy breakfast burritos, simply add jalapeños and hot sauce.
- In this recipe we used frozen shredded hash browns. You could also use Crispy Crowns or tater tots or any other hash browns should work in this recipe. You could also cut up some potatoes they will just take longer to cook.
